      The Wedding Edit: Confectioner, Dee Omole

      The Wedding Cake: the centrepiece to your special day that delivers on flavour and style. Meet Dee Omole, founder of East London-based confectionary studio, Dee's Basement. Known for her best-loved sugary concoctions imbued with nostalgic details and unexpected flavour combinations, we speak to Dee about all things weddings and cakes.

        

      Where do you draw your inspiration from?

      I'm quite nostalgic and love elements that can take you back, so I use that in my cakes a lot. I also love vintage cake styles with Victorian or Marie Antoinette vibes. I then combine this with the simplicity of South Korean style cakes to create my own style. 

      In your view, which is the most iconic wedding cake?

      Oh, that's tough. I'd say one of my favourites was Harry & Meghan's wedding cake by Violet Cakes. I loved how non-traditional it was and the rustic finish with fresh flowers were refreshing to see.

      Tell us about an unexpected flavour combination?

      I stumbled upon a rhubarb, pomegranate and rosemary recipe tried it and fell in love. The contrast of the flavours is unexpected but balances really well. 

      How to create the perfect wedding cake?

      Depending on the brief I look at inspiration of other cakes/flowers etc based on the colours or theme then I like to either use different elements of different cakes to create something completely unique or put my own twist on a specific style.

      What song gets you on the dance floor at a wedding?

      Anything from the 70's will get me on the dance floor. Put on Earth Wind & Fire and I'm there!
